Elote Hotdogs

Summer never tasted so good!  Hart Country hotdogs topped with elote salad made with fresh sweetcorn from the garden, it's summer on a bun.  Elote is typically made to top grilled sweetcorn, but we took it a step further and turned it into a salad to top our hotdogs!  It's a great refreshing recipe that can be easily tailored to your liking.  

Start with grilling a package of your favorite Hart Country hotdogs and 2-3 ears of fresh, husked sweet corn.  (It's ok to boil the sweet corn instead.  Grilling brings out a caramelized flavor.)  

Then, combine the dressing:

  • 1/2 c mayo (More or less to your liking. Can also add a mix of sour cream + Mayo)
  • 1/4 c cotija cheese for authentic flavor (can certainly use a simple shredded colby or taco seasoned shredded cheese)
  • sprinkle cumin
  • sprinkle chili powder
  • sprinkle smoked paprika
  • dash of black pepper
  • 1/4 cup cilantro chopped
  • 2 tbsp lime juice 

Once the corn cools slightly, cut the kernels off and add to the dressing.  

Place hotdog in buns, top with elote and enjoy summer!
