These Bacon Wrapped BBQ Meatballs were a big WIN at my kitchen table! Not only that, but my son dug in and took charge of prepping them.
Start with 1 lb ground beef and 1 lb ground pork. Or 2 lbs ground beef. Or 2 lbs ground pork. Or really mix it up and go 3:2, beef to pork. However you want to fly!
Add meat to bowl and season to your liking. We added kosher salt, pepper, onion powder and a new Kansas City seasoning we hadn’t broke out yet. Form into balls, keeping them consistent in size. That’s the key to even cooking.
Wrap a strip of bacon around each meatball and secure with a toothpick. Or cut bacon in half to stretch out the bacon supply.
Heat smoker/grill to 350°. Place meatballs on a wire rack and cook for 35-40 minutes. After 30 minutes, dredge each meatball in your favorite BBQ sauce and finish cooking for another 10 minutes and there you have it! Deliciousness!
